Peach Cobbler

Peach Cobbler

6 cups of peaches

1 cup of self-rising flour (or all purpose with 1 tsp of Baking Soda)

1 cup of sugar (divide in half in separate container)

1/8 teaspoon of cinnamon (optional)

1/8 teaspoon of nutmeg (optional)

1 egg

8 Tbsp of butter melted

Preheat Oven to 350 degrees Fahrenheit. Melt 4 Tbsp of butter and set aside, place the other 4 Tbs in the baking dish and place in the oven to melt. In a sauce pan, put in the peaches and half the sugar on medium heat let cook until thickened. for about 5 - 10 minutes. Remove the baking dish from the oven and pour the Peaches into the baking dish and set aside. In a mixing bowl combine your dry ingredients (other half of sugar, flour, cinnamon, nutmeg) and mix together. Stir in the egg and mix until it resembles a crumble like substance. spread this over the peaches evenly. then drizzle the remaining melted butter over the top. Place in the oven and bake for 20 to 30 minutes, or until it reaches your desired browning on the top. Depending on your oven check after about 15 - 20 minutes to make sure your top is not over-browning or burning. Great with or without a serving of ice cream or whipped cream on top.....
